Learn to prepare some of the country’s most iconic dishes guided by Rachida’s time-honoured techniques. Each class features five different dishes, ranging from aromatic tagines, to flower-water infused couscous, to deeply flavoured, seasonal salads. Afterwards, enjoy the fruits of your labour in a communal meal, served either in the courtyard, or on our sunny roof terrace.

  • Preserved lemons

  • Goats cheese briouats, honey harissa and mint relish

  • Batata hara (spicy roast potatoes)

  • Green beans with dates, almonds and preserved lemons

  • Chicken m’qualli (a thick, mildly spicy onion sauce) with preserved lemons and olives
